How Much Sodium in Homemade Baking Powder? 315 mg/Tsp

A level teaspoon of the 2:1:1 mix holds about 315 mg of sodium. Here are the numbers beside store-bought and low-sodium powders, the math and who should ask a doctor.

Total Time5 minutes

Ingredients

  • 6 tsp (18 g) cream of tartar, 18 g at the USDA 3 g per tsp; King Arthur lists 21 g for 2 tbsp
  • 3 tsp (13.8 g) food-grade, aluminum-free baking soda, 13.8 g at the USDA 4.6 g per tsp; King Arthur lists 14 g for 1 tbsp; level spoons
  • 3 tsp (7 g) cornstarch or tapioca starch, 7 g is King Arthur's weight for 1 tbsp tapioca starch; we found no sourced cornstarch spoon weight
Glass jar with a cork lid filled with fine white powder beside three small beige ceramic dishes of white powder on a white countertop

Instructions

  1. Level every spoon. Measure the cream of tartar, the food-grade, aluminum-free baking soda and the starch with level spoons. Too much soda against the acid can taste bitter or soapy, so sweep each spoon flat.
  2. Whisk until even. Put all three in a small bowl and whisk until you see no streaks of any one powder. An uneven mix puts soda in one bite and acid in the next.
  3. Jar it. Pour the mix into an airtight jar and keep it at room temperature. Sources disagree on how long it keeps, so see the storage section below.
  4. Use it right away in the batter. Swap 1 teaspoon of mix for 1 teaspoon of baking powder; that spoon-for-spoon swap is our deduction from King Arthur's page. The mix is single-acting, so bake soon after the liquid goes in.

Notes

Metric amounts are rounded. The USDA household portions are 4.6 g per teaspoon of baking soda and 3.00 g per teaspoon of cream of tartar. The 1/4 tsp and 1/2 tsp weights are our division, not USDA portions.

The card makes 12 teaspoons of mix. Per teaspoon of mix that is 1/2 tsp cream of tartar, 1/4 tsp baking soda and 1/4 tsp starch, which is the 2:1:1 ratio.

Sodium is an estimate calculated from typical USDA FoodData Central values (27,360 mg per 100 g of baking soda, 52 mg per 100 g of cream of tartar). It is not measured. We did not calculate the other nutrients because we found no sourced teaspoon weight for starch.

Nutrition Information: Serving size: 1 level tsp of mix (1/4 tsp baking soda, 1/2 tsp cream of tartar, 1/4 tsp starch) (estimated)
